If changes are made on the TallOrder back-end, how do I update it to reflect on the POS?

Once you have made changes to the Admin side of TallOrder, the changes will reflect immediately on the TallOrder POS. Simply click on the Settings button on the TallOrder POS and then click on Update Menu and Settings. This should result in an update on the POS and reflect immediately.
